Nan's Pineapple & Mandarin Delight Cake

I just realized that I never posted the recipe for the cake from the Laurel Shower.  It is SO good.  It is a huge hit at work every time Nan brings it.  I am so glad she shared the recipe with me!


Nan's Pineapple & Mandarin Delight Cake 

Cake
1 cup canola oil 
4 eggs 
1 box yellow cake mix 

1 15 oz can mandarin oranges 

Beat eggs and oil with mixer.  Add cake mix.  Crush mandarin oranges into small bits and add to mix along with juice.  Bake in 9x13 pan at 350 degrees for 25-35 minutes or until center is done.  Let cool.

Frosting
1 8 oz container Cool Whip 
1 small box instant vanilla pudding....sugar free or regular is fine
1 large can Crushed Pineapple 

Combine Crushed Pineapple, including juice, with instant pudding until blended.  Fold in Cool Whip.  Spread on cooled cake.  Top with 1/2 bag of flaked coconut (optional).  Cool at least 3 hours to allow for flavors to blend.  Best if served cold.
